Lubrication. That is the primary function and everything else follows from it. A quick detailer puts a slippery film between a towel and the clear coat so that whatever the towel picks up slides rather than digs.
The gloss is a pleasant side effect. The protection is close to nil, and anyone buying a quick detailer for protection should buy a protectant detail spray instead — it is a genuinely different product.

Not quite. Protectant detail sprays add months of real beading; plain quick detailers add gloss and lubrication and essentially no protection. The names are used interchangeably, so check what the product actually claims.
Will a quick detailer scratch my paint?
Only if you use it on genuine dirt rather than dust. On a dusty car with plenty of spray and clean towels it is safe. On a dirty car it means dragging grit across the paint with a towel, which is exactly how swirl marks are made.
Can you use a quick detailer as clay lubricant?
